The main enzyme for metabolism of ingested histamine is diamine oxidase (DAO) (1–5). An impaired histamine degradation based on a reduced DAO activity and the resulting excess of histamine may cause numerous symptoms mimicking an allergic reaction. tissues; the highest activities are shown for small bowel and
